Get Your BBQ Ready! Roasted Peppers Stuffed with Vegetarian Chili

Did you think grill and meat belong together?They do not! Barbecue is not exclusively restricted for grilling lovers and carnivores. This pleasant and rallying cooking appliance can also delight vegetarians fond of grilled vegetables. As proof, this recipe of roasted peppers stuffed with vegetarian chili!

Vegetarian Chili

 Ingredients

  • Red beans
  • Onion, ½ or 1,to taste
  • Diced canned tomatoes
  • Instant whole grain brown rice
  • Chili powder, to taste

Preparation

  1. Brown a bit of garlic and onion in the oil for a few minutes.
  2. Add the diced canned tomatoes with some of the juice. Simmer for a few minutes.
  3. Stir in the rice and chili powder and simmer for about 10 minutes.
  4. When the preparation becomes thicker, add the beans

Roasted peppers

Ingredients

  • Peppers
  • Olive oil
  • Sea salt or seasoning salt Herbamare
  • Garlic

Preparation

  1. Cut tops off peppers, remove ribs and seeds.
  2. Blend olive oil, garlic, and salt.
  3. Brush the olive oil mix inside and outside the peppers.
  4. Grill peppers on the barbecue
  5. Fill roasted peppers with vegetarian chili.

Creatively stuff the peppers

Do not hesitate to get creative while filling the peppers. Here are some ideas:

  • Quinoa, cranberries or citrus fruits and roasted almonds
  • Couscous, grilled tofu or chick peas, parsley and feta cheese
  • Meat-free, kernel corn, salsa and Tex Mex cheese

Improvise with your plates

Do not hesitate to grill your favorite vegetables and to serve them as a side dish. Barbecued zucchinis and tomatoes taste so much better. You can also fill them. Chili peppers will spice your meal up.

Feed your carnivores

Vegetarians may feel alone at the table. If you are surrounded by carnivores, why not mix cut or pulled meat to their portion of your stuffing. Keep the largest pepper for yourself and serve the smaller ones to your carnivores.
